I bake regularly for a social enterprise group here in Wellington. This has been one of my quick go to recipes for years and is loved by everyone that tastes it. I love the smiles of gratitude that I receive when I deliver the box of deliciousness to the receiving charity.

Ingredients

110g Soft Butter

175g Caster Sugar

175g Self Raising Flour

1 Teaspoon Baking Powder

2 Eggs

4 Tbsp Milk

1 Grated rind lemon

For The Topping

Juice 1 Lemon
100g Caster Sugar



Tips & Tricks

You can use either a 20cm round cake tin or a bundt pan like in the photo.  If using bundt pan cooking time may be slightly quicker so check after 25 mins.

 

 

Method

Prep:

30  mins

1 Preheat oven to 180oC

2 Sift flour and baking powder into large bowl

3 Add butter, eggs, sugar, milk and lemon zest

4 Beat until well combined

5 Pour into greased tin and bake for 30 mins or until cooked

6 Whilst cake is baking mix sugar and lemon. together for topping


7 When cooked remove cake from oven. If using round cake tin pour topping mix over. Allow to cool and then remove from tin.

If using a bundt pan, poke cake with skewer and add a few spoons of topping mix, then carefully tip cake on baking paper covered cooling rack and pour over rest of topping mix.
Sprinkle a little sugar over before serving.
